Sweet and Tart Treat
Summer is Minnesota’s rhubarb season. It seems that almost every yard has a rhubarb plant. You’re likely to find some rhubarb in your neighbor’s yard if you don’t. It was normal for me to take a few stalks of rhubarb, and dip the ends into a sugar plate while playing outside. When you combine rhubarb with this cake batter, it melts in your mouth.
I have seen recipes that use rhubarb in a cake mix. I may still try them, but I think a homemade batter is better. It’s amazing that you can turn a plant in your garden into so many delicious desserts and snacks. - Baking powder

- How to make Rhubarb Upside Down Cake
- Preheat oven to 375degF. Melt butter in either a 9″ by 13″ baking pan or 9 inch round baking pan. In a large mixing bowl, combine sugar and oil. Incorporate the egg.
- In medium-sized bowl, combine the flour, baking soda, and salt.
- Add the flour mixture to the sugar mixture, alternately adding the milk.
- Pour batter over rhubarb. Bake the cake for about 40-45 minutes.
- Cool on a wire rack.
- Carefully turn the cake onto a serving platter. Serve with cream, if desired.
