Roasted Red Pepper Pasta Recipe
In my mind, this is my favorite restaurant pasta. I call it “Bad Mood Pasta”, as these noodles are always a mood-lifter. When I don’t have a clue what to cook for dinner or when I am feeling down, sad, stressed, or just plain not feeling it, I make myself this creamy, savory, pasta. It’s restaurant-quality, but it can be made in 20 minutes. The shallots are then folded into a creamy red pepper sauce and coated with a bunch of bouncy noodle. I love it with shrimp. (pull out a frozen bag, defrost, season and saute). Also love this with the simple green salad or air fryer broccoli.
Also, if I’m making this for dinner guests, which has become somewhat of a habit lately, I SUPER recommend this with the house favorite garlic bread. This is a hit every single time.
My favourite noodles are these fun pennoni which are like a giant penne. These noodles are always praised by friends and family – the folds and angles are perfect. The rigatoni and penne are also perfect!
