It’s not drama, but it could be. These classic baked chicken meatballs were my favorite for years. They’re still my favorite! But there’s another meatball on the block. RICOTTA Meatballs to be precise! They are an important part of my life. It’s so simple, they are super juicy, tender and versatile. Imagine that you are the one pulling out a pan of meatballs with a crispy top and bubbling sauce from the oven. On the table, a bowl of greens is set. It’s a wonderful feeling to be loved this way.

They’re juicy, flavorful, and luscious. Bjork likes these meatballs for their protein. Who knows why our girls love these meatballs, but it’s a real obsession. The other night our 3-year-old prayed in a tiny voice before dinner. She closed her eyes, folded her hands, and said solemnly, “God thank you that mom made these meatballs.”
