Potatoes, to me, are the ultimate comfort food. I love potatoes in any form, whether they are mashed, fried or baked. If you’re looking to elevate this classic dish, there is no better way than by adding tender, juicy pulled pork. The pulled-pork baked potatoes are a favorite at a local BBQ restaurant. I thought it would be easy to recreate them. We have a local BBQ restaurant that serves the most amazing Pulled Pork Baked Potatoes so I figured how hard could it be to recreate them at home.
This is such an easy supper, just toss a couple potatoes on the grill or in the oven, add the toppings and in no time you have a satisfying little dinner.

- How to make a Pulled Pork Baked Potato
- Preheat your oven to 400degF (200degC). The potatoes should be washed and dried, then pierced with a fork.
- Place the potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork. While the potatoes bake, heat the pulled pork on medium heat in a skillet. Once the potatoes are finished, allow them to cool before cutting them in half lengthwise. Fluff the insides with a fork, and if desired, add a little butter for extra creaminess.
- Add a dollop of sour cream.
- Top each potato with a generous portion of the BBQ pulled pork. Sprinkle shredded cheddar cheese over the pork and allow it to melt.
- Add a sprinkle of chopped green onions, and any other desired toppings like coleslaw, bacon bits, or jalapenos.
Serve the pulled pork baked potatoes while they’re hot.
