This Is A Recipe You Make Once Per Year.

I first made arancini a couple years ago for a dinner party around the holidays, and now I have thought about it again, and made it again, every year since.

Arancini is the Italian dish of balls of creamy risotto packed with mozzarella cheese and fried to golden stuffed perfection. This is not an easy recipe to prepare. This is not an everyday, quick dinner. This is not a fast, everyday dinner. This is the opposite. We make risotto first (which can be a little tiresome) then roll it up in mozzarella cheese and bread it before frying and dipping it into a hot, melty red sauce. This is a special occasion recipe, which is why I make it only once a year. When I make it… Oh my gosh.

I had to make it early for the recipe and video. I’m sorry! But it’s always on my calendar between Christmas and the New Year. It’s the people having fun, it is a spirit of frivolity and it’s an occasion to celebrate.

But it’s ultimately the desire to tear apart a crispy golden ball of creamy, risotto, stuffed with molten cheese, and then dunk it in a rich, red sauce. I can’t even. I can’t even. Repeat the licking of fingers. If you have never eaten arancini before, I’m excited to see you make it.
