French Toast Crepes Recipe
It’s a Snack, It’s a Breakfast… We Love Them.
A few months ago I saw a video from Dini at Prep and Rally where she took an almond flour tortilla and basically gave it the French Toast Treatment!
The tortilla gets dunked in eggs with a bit of maple syrup (and milk, if you’re me) and pan-fried into these bendy little golden discs that resemble a crepe, but are also a bit of French Toast at the same time?
They’re French Toast Crepes! They’re French Toast Crepes! Yes! Yes! It was a cute, fun video but it’s a recipe we use again and again. They are now made every 1-2 week. You’ve all posted pictures of them on Instagram. Here are the tortillas that I use:
My daughters love them for breakfast and I do too – but they’re also a big hit in lunchboxes and as a snack! After you French toast the tortillas, roll them up with yogurt and jam for an easy grab-and go! No, that is not a ham-and-cheese roll up. It’s just jam and yogurt. But never say never.
