Beat at medium speed until mixture forms dry, shaggy dough. Add cheese and continue to mix thoroughly. Press loose crumbs together. Wrap in plastic wrap. Refrigerate 2 hours or overnight.
Heat oven to 350degF.
Roll out dough on lightly floured surface to 1/8- to 1/4-inch thickness. It will initially be difficult to roll, but it will soften.
Press any cracks on the edges of dough.
Cut out dough in 2-inch circles. You can gently reshape spare pieces of dough to make extra crackers. Bake 15-17 minutes, or until edges are lightly browned. Store in airtight container at room temperature or frozen.
